I recently saw suggestions for a caramel apple sauce with chunks of apples and a Pineapple Cream Sauce.

The Pineapple Cream Sauce was to go with Pineapple Upside Down Pancakes.

For me, a simple sauce would be a Honey Butter.

Yes, I make fruit sauces, usually when I don’t cook the jam long enough lol.
2/3c fruit pulp to 1/2c sugar works well with everything I have tried (guava, plum, mango, lychee, Surinam cherries ext)

I whip cream with a little maple syrup for deserty versions of those items, but more frequently I have them savory (add some corn meal (or even cut-corn)) and server it with salsa.

Hmm, savory??  Sound intriguing.  Kinda like a corn muffin, pancake style?
