Hello everyone.
Does anyone want to share good and simple recipes for making dinner from my chickens (cockerels)? Preferrably not too complicated or time consuming, since I am probably not a very great chef and the days are filled with many tasks. They are waiting in the freezer for your suggestions.
My favorite way to cook chicken.
Is whole ,stuffed on my hardwood smoker.
Soak thawed chicken for several hours in a cold salt water brine.
Salt, pepper and garlic powder is rubbed under the skin on the breast and on the entire outside.
I use stove top stuffing , pre cooked , fill the entire bird to capacity.
Then its off to the smoker , where I generally use a maple wood or a hickory wood. Average temp of 240F for the next 3-5 hrs. Until a temperature of 165F is reached in the center of the stuffing. Done!

My favorite easy recipe is putting it in a roasting pan and baking it. I stuff the insides with a chopped onion. Salt and pepper the bird. Then put cut up potatoes and carrots in the pan. Instant meal and tenderly good. The main key is sealing the lid. I use foil over the pan and it forms a gasket for the lid. A baking bag works well also. This keeps the liquid in the pan. Very important.
Lately i have been focusing on broth though. We dont buy chicken meat or broth and the number of chickens and turkeys i have is limited. So i make an easy broth. I put the chicken in a pressure cooker with carrots, onion celery, water. When its done i collect the broth then use the meat for something else that can use the cooked meat. Chicken ala king is one example but plenty of uses for it. Sometimes we eat it as is. I guess my point is easy broth is easy. So many people simmer it for hours on end. So many things from yesterday seem so hard like this, making bread, making a pie from scratch. There are easy versions of a lot of things.
I fixed roast chicken like Wayne this weekend. After our hunters went home, I then took most of the meat off the bones. I put the bones in the crockpot and cooked them all day for bone broth.
You can use regular tortilla chips in this rather than using Doritos.
