I'm curious as to why there is a paleo forum but not a forum for other diets? (I suppose vegan also qualifies.)

Is Paleo somehow significantly more common amongst permies than other diets, like keto, or GAPS, or so? Or is Paleo the prescribed diet from, say, the Weston A. Price Foundation or something?

It's not that Paleo is necessarily more common amongst permies than other diets. New forums are created here on Permies when there are enough threads to populate a new forum. I think the number is a minimum of fifty threads of a common subject. There may well indeed be fifty threads discussing vegan or keto here on Permies but have yet to be organized into a common new forum. Permies staff are all volunteers and organizing wayward threads into new forums is not high on the priority list, but generally if a member of Permies community asks, gets approval from Permies staff and helps identify and locate common thread subjects finding enough to meet criteria, a new forum will be created. That recently happened when a member asked for a sewing forum, helped find the threads, and abra-cadabra we now have a Sewing forum. Same thing happened last year with a new Berries forum.

I also couldn't help but notice that although Paleo and Vegan are categorized under Kitchen, they're not displayed on permies.com/forums.

What is displayed on https://permies.com/forums is filtered based on the ratings that each user gives to the various forums. If a person gives a forum a low rating, then articles from that forum don't show up for that user. To see them, the user has to interface directly with the forum, or give the forum a higher ranking.
