I use silicon cake pans and muffin cups, but for bread, I still lightly grease the metal loaf pans. The silicon pans are incredibly useful for cakes and muffins. Oh -- I make rolls out of bread dough sometimes, and those can go straight into the silicon muffin cups without greasing, and they come right out. Or I grease the metal muffin tins without silicon, and the rolls have a nice crunchy crust.
I think when the dough is very wet, and I bake the bread long enough to dry a bit and shrink, it pulls away from the pan and would come loose from metal pans. But I don't want to risk it so I still grease them, though lightly. If I had iron pans I would try not greasing.
