Paul, I've spent most of the last 25 years building and repairing parts for industrial machinery, I've been in quite a few food processing plants. The fastest way to swear off some "foods" is to see it "made"....
Apart from the sheer amount of sausages made in a day and all the machines, I was surprised that the process is actually quite similar to what one would do to make hot dogs at home.
Okay, I am still freaked by the liquid smoking process. I would rather see a traditional smoking process. I guess the smoking and cooking process would be combined in the artisan method.
