Hello there! I wanna find out if there's any vegan egg whites or something similar to it as well any non white sugar, plant based. I've just harvested peppermint yesterday at my community farm and awaiting to figure out what to do with them. I wanna make sustainable goodies for all to improve health. Please let me know if there's any stuff that could help make my mint leaf recipes more healthier and sustainable. Good day!

Aquafaba can replace egg whites as is in many things. You can even do a meringue with just aquafaba and sugar.

When you cook legumes, the liquid that remains is called aquafaba. Although the easiest way to obtain it is to open a can of chickpeas or white beans, and there you have it!

I sometimes forget to recommend the cooking liquid from making chickpeas or as a quick alternative the juice off a can of chickpeas.

I found all sorts of pretty Meringues that are mint though I could not find a recipe that used fresh mint.

You could simmer/steep the mint leaves in coconut milk or other vegan milk, and blend with dates or maple syrup or other sweetener as the base for ice cream, smoothies, or pudding.

Or use a strong mint tea to make a syrup with your favorite sweetener and mix with ground nuts.

Very good ideas! I've heard somebody from my community farm that I should use chickpea oil to add to my mint leaf along with sugar. How long I keep my mint in the oven for them to be crispier?

How could make our mint candy last for a long time to eat them daily? Could we put them in a refrigrator to keep them from being spoiled overnight?
