That is a stainless steel barrel.
That is a natural heat patina

Thanks Tom. Great to know. I'm early on in the process and just trying to figure out components and design then how much needs to be budgeted. The SS barrel looks great, just have to see what the total bill comes to and if that is feasible.

Many of the pictures I see show barrels that are oxidized (rusty looking). What can we expect a new unpainted steel barrel in the high zones to look like over time?

Search copper sulfate patina or forced patina.  There are lots of products and home brew methods out there.

I warn you, most of the artistic examples on YouTube are doing it on a flat surface, which is MUCH easier to control than a round one. There is a learning curve to prevent runs and drips.
