I also have crazy slug problems (I found one on THE RABBIT yesterday, which I hope is Peak Slug because I just can't imagine what's next. the washing machine?).
I don't use ollas, but my beds are edged with ceramic roofing tiles. Which are the best hidey holes for slugs and snails. In my front container garden, they like to hide in the plastic flower pots.
I can't get rid of the tiles or the pots (like you can't get rid of the ollas), so what I do is try to trap the little monsters. I'll go out on the first rainy night and pick as many as possible, i'll put down traps (cabbage leaves, wooden planks) and then first thing in the morning collect the critters that are underneath. I've tried the beer traps and they seem to be on the same line as slug baits, which in the past i resorted to and found totally useless (and not in line with what I want to use in my garden).
Specific to the ollas, maybe you can cover the holes with screen or pantyhose or something?
