The step that was missed, is called 'conditioning'. To condition your dehydrated product, after it has cooled from the dehydrator, place it in a glass jar, and seal it well. Shake it, then leave it on the counter for a couple days, watching to see if any sign of moisture forms in the jar. If there's even a hint of moisture, dump it onto the dehydrator trays, and keep drying it. Repeat as often as it takes for the moisture to be completely gone. Storing your dehydrated products in plastic bags does not keep them safe from moisture,
