Is a chicken coup made of rammed earth, with ceiling insulated with straw and slip going to be "chicken proof"? Will it hold up to pecking?  What should I use to coat the rammed earth that is friendly to chickens?

I don't see why it wouldn't work. Chickens don't peck at dirt for no reason. They are looking for things to eat. As long as the rammed earth is done in such a way so that little critters are not living in it, it should not be of interest to the chickens.

Hi Tom,
rammed earth doesn't need to be coated at all.
It needs to be protected from rain, which an overhanging roof can do.
The first foot or so should be made of drywall (as in dry stacked rocks, not plasterboard) or something similar, so the moisture of the earth doesn't wick up into the wall.
If you want to cover the wall for aesthetic reasons I would go for a clay plaster inside (clay, sand, very small fiber) and a lime plaster outside (lime, sand, small fiber).

Chickens will very happily peck at dirt, in my experience. They're after grit, and sometimes minerals. They will also scratch and peck away at hard sections of earth to turn them into nice soft dust bathing spots.

I think an earthen coop structure is a great idea, but you might need to either accept that there will be some erosion of the walls anywhere a chicken can reach, and plan to replaster occasionally. Otherwise, you'll need some way to prevent "fowl play," like wire mesh.
