I probably wouldn't bother peeling them for stock.
The only way I've eaten feet 'whole' is Chinese-style, but most Asian countries have versions.
I hear that chicken feet make wonderful broth but I have not had experience cooking them as a dish themselves. I wonder how many feet would be needed per person to truly be a meal?
