I actively dislike football. But I know 1/3 of America doesn't. So I figured I'd start a thread about non-processed, semi-healthy (who wants to be healthy on game day?) recipes for superbowl parties that don't involve bean dip that looks like cat vomit...

Here is a recipe for a great cheese dip: think creepy nachos from the concession stand, but 100 times yummier!

HEALTHIER CHEESE DIP
• 1 egg yolk
• 1 Tbsp. arrowroot powder
• 1 Tbsp. milk
• 1 C. cream
• 1 C. milk
• 8 oz. grated cheddar cheese
• 4 oz. cream cheese (optional)
• 14oz. diced tomatoes & green chiles, drained
• salt & chipotle chili powder to taste

The How-To
First, create the thickener that will bind the cheese together and keep it from turning into a nasty, oily mess when it melts. Mix egg yolk, arrowroot powder, and 1Tbsp. milk until smooth.

Next, pour cream and milk into a saucepan and warm over medium heat. Gently stir in the thickener and continue stirring until the cream starts to thicken.

Once your sauce thickens to your desired consistency, add in the grated cheddar cheese and small spoonfuls of the cream cheese (homemade from grass-fed cream is best). Lower heat to medium low, then continue stirring until the cheese melts and you have a deliciously creamy sauce.

Now for some flavor. Remove the sauce from heat, and stir in the tomatoes & diced green chiles. Then add salt and chipotle chili powder to taste, being sure to stir everything until evenly distributed.

I am drawing a blank right now, I too am unimpressed by most sports. There are some awesome athletes out there though.

That's a great one Zenais!! ( I am trying to pronounce your name in my head and it's just an utter fail..) anyways, I love cheese. I saw something somewhere that said "cheese is the glue that holds my life together"

hahah so glad i am not lactose intolerant!

I am so with you on the cheese thing!

We have not watched a sports game since we moved off the grid 17 years ago. Now I have planned to introduce our three teens to the event- and they are so bummed! They are in the middle of a Masterpiece Theater series and would rather watch that. Hilarious! I just feel that if they are headed off to an American college, they might find it useful to know what a touchdown is. So, in spite of impeding mutiny I am putting my foot down: we are going to do the whole 'big game' shebang complete with snacks and things. At the very least we'll have a lot to talk about!

Don't own a TV, don't watch sports, don't understand football (I get soccer however because that is what I grew up with), don't snack in general. However, my kids love Socca (a recent discovery) and I serve it dipped in homemade yogurt (see http://www.makeyourownyogurt.com) with salt and freshly chopped dill/mint (whatever is available).

You can find a lot of socca recipes online. Here is one http://cooking.nytimes.com/recipes/1014757-socca-farinata.

I like Kale Chips too. But I suppose Kale is not available at many places this time of the year.

Seasoned fries that you bake instead of fry is cheap and easy. You could probably make ten pounds of them for less than 20 bucks.

You can do the batter or simply the (non-gluten) oil mix approach:

  • garlic salt (or powder)
  • onion salt (or powder)
  • sea salt (if not using salt above)
  • black pepper
  • paprika
  • some kind of oil (I use coconut or olive)


  • typically I either baste the fries or throw them in a ziploc bag with the seasoning in it. (a gallon mason jar would probably do the trick too if you're plastic-averse).

    for the batter route, add whole wheat flower to other ingredients and then dip the fries in it.

    Bake in the oven at 450F until they're done (about 45 minutes, but it really depends on your oven.)

    if you're feeling fancy you can add other spices like marjoram. Gotta love that sweet marjoram (Origanum majorana).

    She's got lots of really good ones, my other fav is fried chicken skins. They are amazingly delicious!

    The Players

    chicken skin
    tallow, lard, etc. (any fat that takes well to heat, butter may burn) (where to buy good fats)
    salt (where to buy real salt)
    hot sauce
    honey (where to buy raw honey)
    The How-To
    In a large, well seasoned, cast iron pan melt a tablespoon or so of your fat choice over medium heat. Working in batches, as to not overcrowd the pan, lay the skins into the fat. Let the skins render and cook until a nice, golden brown color has developed. Flip to the other side and fry until golden brown. Place the fried skins on a paper towel lined plate and sprinkle with salt.

    If the skins shrivel up & constrict too much when you lay them in the fat:

    Turn down the heat a bit.
    Immediately flip the skins over to the other side; this will sort of ‘unfold’ the shriveled side and keep the skins straight.

    Serve immediately, doused with hot sauce and/or drizzled with honey.

    Thanks for this thread- I am always looking for snack ideas for the impromptu teen gatherings we seem to have quite often.
