enlivening Cailfornia chicory salad

Chicory leaves look like heads of lettuce . This time of year is the time to eat it. Liver cleanser for sure. A refreshing lunch on a warm spring day.

1 bowl of chicory cut like lettuce 2 people
1 orange or mandarin or so cut in grapesize peaces
1 glove of garlic
chives or garlic chives
Optional: onion flower buds chopped fine

Toss with :
olive oil ! T
Umeboshi vinegar ! tsp
roasted sunflower  seeds or pecan pieces
some cooked brown rice to give it body and easier to chew.

It is tasty and slides down cause so moist. I usualy mix coked vbrown rice into it to have a satisfying lunch on a hot day. It even stays good to take to lunch.
