Yes, great videos. Nice fella - does a good job. This will help very much.

One question, though... why debone a roast? Doesn't much flavor come from the bone in and doesn't the bone help guide heat into the center of the cut?

Oh man I gotta get me more knives! I tried to debone a hoof with a pairing knife.pffff the dog's were maddddd.
