I have a beautiful beet harvest this year & want to can some.
Can you share your favorite pickled beet recipes that don’t have too much sugar & vinegar.
I only have a water bath canner at this point.

Did you find a good beet canning recipe?

All I could find with a search of the forum were pickled beets.

Do you have a pressure canner?  Beets definitely need to be pressure canned.
I swear by this recipe.  No sugar!  Perfect every time!

One thing I have done differently is prior to the canning process, I roast them instead of boiling to cook.  The skin falls right off, just like when boiled whole.  Both methods work, it's Just a preference of mine because the rules for oven roasting beets  are very flexible. Roast them wrapped in foil at 400° for about an hour,  or at 375° or 350° or 200° or whatever.  Just cook'em till they're done

Oh , and don't slice before cooking and don't cut the root area off the bottom before cooking.  Any nick or cut causes "bleeding" of the color.  There probably will be a little leakage of the beet juice anyway while cooking, cutting the beet in any way will open an artery, so to speak!

Gauri, I just re-read your post and see that you only have a water-bath canner.  It's not safe to can beets with that.
You can try to post on https://www.freecycle.org/town/AshevilleNC and see if anyone has one to give away, or a thrift store yard sales, etc.  or if you have the $ go ahead and buy it.

The pickled beets article here is very thorough.  It discusses various vinegars and spiced and says you can leave the sugar (as well as other things) out altogether.  All this is explained concisely.  It is a quick read.

Well, here are some of my beautiful beets! I got my pressure canner & successfully canned 5 pints! A great beginning!

I have taken to dehydrating vegetables and keeping them in pint jars near the stove.  I toss in a handful of what I feel like as I cook. Soups get a lot more interesting.

I want to be 15 again …so I can ruin my life differently.
