Cooking up some rhubarb snacks to go well with tea and photography.  I've got some delicious recipes, but alas, they all have wheat.

Any thoughts for finger food that will look good on camera, be wheat-free, have rhubarb as the star, and has very simple ingredients?  If it can be Kosher, that would be even better.

A few ideas:

A crisp (or crumble) using oats and non-wheat flour.  To make it more finger-friendly, you could make a bottom shortcrust out of almond flour and butter or something similar.

Mini meringue shells with rhubarb compote

Pickled rhubarb slices on wheat-free crackers

Something I started doing, a couple years ago, is making rhubarb pie filling on the stove, as if I was going to can it, then pouring into trays, and dehydrating it, for fruit leather. I use stevia or monkfruit, to sweeten it, so it ends up being gluten free, diabetic & keto friendly. You could also make jello with it, just adding the gelatin to the hot fruit. I haven't tried that yet, but I'm planning to, this year.
