Does anyone know of any other seeds that work well for making tofu?

Chickpeas and fava beans are the most common substitute for soy in tofu, muso, 'soy' sauce and that sort of ferment.  Lentils are used sometimes too.

Wild Fermentation by Katz goes into it a bit, but if memory serves, the Art of Fermentation goes into more detail about how to do this with different beans.

There is a company here in Cincinnati that is making Pumfu , with pumpkin seeds.

Speaking of which, I just saw this Youtube video of the process of making one-ingredient pumpkin seed tofu and it was fascinating:

Mary, the Youtuber, has several non-soy tofu recipes and seems to do a good job of explaining the pros and cons of each (including a pink red lentil tofu!) as well and the details of making it.

One "by product" of making the pumpkin seed version was plant based milk too.
