I watched this today and I have a few thoughts:

0:57-1:07 Look at the layout of cooking. And how this coking area can double as a serving area.
1:07-1:12 Modern Burner unit 52,000 BTU's. I wonder if this was a rocket stove how well would it work. I think it would be awesome!
1:20-1:50 Pot skirt. Why is it not used a lot in other kitchens? I have read up on pot skirts a little but I have not found a good way to build one.  
2:29 Could a rocket stove core be substituted for a modern burner unit? I say yes it could be with a little work
2:49-3:22 Haybox cooker? I think so. And what about using a experiment with water in a haybox cooker to help with food perp?
6:15-6:25 Could venting of heat be passive? Maybe the use of vents on top and vents around the floor?
7:00-13:00 I most likely have more tools and pans in my kitchen than in this one.

In the end I learned something new today and that was there is a Advanced Culinary Skills Training Division in the military.

I have always liked pot skirts. They don't have to be as elaborate as that one, I made one out of a #10 can to fit a specific pot on a specific burner, it worked REALLY well.
Part of why people don't use them more is they have to fit the pan well, which means unless you make something really cool that can be adjusted, you need one for every pan you want to use it on.
Bah, now my head is designing an adjustable pot skirt while I need to be working...

Is there a pot skirt calculator? Something like pot is xyz and burner is xy equals pot skirt xyz. That would be a big help to me.

Not sure if it's an equation, the top has to fit fairly snug around the pan, the bottom needs to cover the exact burner that will be used, the height is from the top of the burner to about  2/3 up the pan.
So you need to know your pot, and you need to know what burner you will use.
Make a cardboard mockup before you start with metal.
And yeah, rocket stove would rock! I had mine running on my hibachi that I fed whatever I could could find.

I use aluminium foil for a pot skirt. I've folded it over many times to make it ridged.

I think a bunch of this set up could be designed for rocket stove-powered equipment - it just wouldn't be mobile any longer.

I've got a glass-topped electric stove in the house, but I'd really like an outside kitchen for summer canning, and the pot skirt would be a huge help on some of the key pots I use for that process.

Nice video - thanks! It would blow my mind if I had to cook for that many people, but we would need something like that if a big earthquake hit were we are.
