For breakfast I stick to meat/protien, veggies and some legumes.
So you could grow a huge list of vegetables, beans/pea, and maybe some eggs and fish
You could go with a timer/slowcooker too so that it starts when you come home and then turns off before you go to bed.
You can also heat up some beans/rice then microwave spinach/veggie and egg. Its not the best but it must be better than pop-tarts.
