We made a custard-type pie yesterday. It was similar to a Lemon Chess Pie.
After eating some I put it in the (cold) oven so nothing would get into it overnight.
Did hubby put it in the fridge because it was made with eggs?
Do custard-type pies need refrigeration?

I generally put pies in the fridge because they last longer. If I planned on them being finished within a day or 2 I would feel ok leaving it out. I think the internet would tell you to put it in the fridge though.

I agree that for safety anything on the internet would say to put the pie in the fridge. That is what I have always done until yesterday. I wasn't thinking about safety, just thinking about the cat. I have pretty much taught her to stay off the counters when I am around.

Lemon Chess pie looks like a lemon meringue pie without the meringue?
The recipe that I use for lemon meringue pie includes 4 beaten eggs cooked like a custard with milk and cream and I have never refrigerated it, I leave it on the counter with a mesh cover to keep out any flies. It usually gets eaten within a week and doesn't get a chance to spoil, even in summer.
