Hi Kane,
I suspect a lot of the fat availability will have to do with the diet of the animal as well. I would look into geese diets and stock up on the things that they love... because they will eat a lot of it. Some breeds will still put on fat for the winter... so butchering them late fall would help as well, vs doing it in the spring.
