Anyone experimenting with Retort Canning?

Was just wondering if anyone has delved into the retort method of canning?

My quick take would be that this would require specialized equipment. If you are “canning” wet foods in flexible pouch, you need some way to sterilize, remove air, and pressurize such a pouch.

Standard vacuum sealer won’t do, if you vacuum seal wet foods and leave out at room temp, you just get anaerobic fermentation.

One needs a chamber vacuum sealer and a pressure canner. Standard mylar bags will not work. Retort bags are available. Pint bags depending on where you get them are .50 a piece. You wouldn't have the luxury of reusing canning jars but for some niches in my food storage I am considering trading out my current vacuum sealer for a chamber style.

The deeper I look, the less inclined I am to attempt it. Bags are harder to keep organized, in the pantry, mice can still get in, and I'm not really seeing much benefit FOR ME, in going this route. Then again, we don't do much camping (or traveling at all, for that matter), anymore, either. But, for anyone going on overnight hikes, camping, biking, canoe/kayak trips, etc, I think this would be a fantastic way to take your own food along, and that would definitely make it worthwhile.
