I get a notification for every post in a thread despite having the settings so I would only get a notification for a new post if I already read the previous in that thread. Or did I misunderstand that part in the settings?
"By default, when someone replies to a thread you posted to, you get an email notifications. However, you wouldn't get another notification of that thread, until you access that thread after you have been first notified. Enabling this option overrides that constraint, and makes you get a notification email each and every time someone replies to a thread you posted to."
Does that rule also apply to topics I am watching? Or in a watched thread I get a notification for every post?
I am not sure though I feel every time someone posts to that thread, New Here, a notification goes out. There have been 10 replies thus 10 notifications. Am I wrong?
Maybe this has smoething to do with bookmarks or watches?

You got a notification for the new thread, which means you have a watch set up for that specific forum.
The settings of that watch override the generic settings in your profile for that specific forum.
I looked at the email outbox and they are sent for different posts. The correspond with the time in your screenshot. That rules out a bunch of things on our end.
Most likely things left are one of two options.
1. you read the thread and then got a new email. (I'm going to assume this isn't the case)
2. the watch settings for that forum are set to " Watch for new topics AND all posts in this forum"
You can find the watch settings button at the top of that specific forum. Since it overrides the default subscription settings so you could choose " Watch for new topics in this forum" and then subscribe/watch the threads you are most interested in (using watch settings at the top and bottom of the thread, or by replying).
