This is a fruit we know as a choko. Lots of recipes online. I usually make a stuffing and bake 'em much like zucchini or their larger incarnation vegetable marrows.

The "choko fruit" is actually a vegetable called chayote (Sechium edule), also known as choko, christophine, or mirliton. It's a member of the gourd family (Cucurbitaceae) and is native to Mesoamerica.
