Problems with growing certain microgreens

Hey peeps--new more or less to permies, although I've been a lurker for many, many years. Anyway, one thing I've had a lot of success is growing microgreens in jars and even in small batches in my Asphalt Rose grower, but I've been stumped trying to grow pea sprouts and to a certain degree, arugula, cilantro, and Italian Amaro Blend microgreens.

I tried pea microgreens in the little trays but with little success. I made the mistake (twice!) or trying to grow arugula sprouts in a jar and of course, that was a slimy mess. So, I switched to the trays and tried not to overwater, but the arugula is still not happy. I'm using either coco coir or jute as a mat. I hate to think I wasted money on the seeds. My seeds have been either from Todd's Seeds or Biological Interests. I've had luck with Broccoli and Friends and their Radish blend in the bottles. The ones that do best in my trays are Biological Interests Jazzy Mix and Sandwich Mix. Any thoughts?
