what's for dinner?

My fever broke, now I'm STARVING!!  I've got a hankerin for chicken noodle soup.  I've got some chicken I put up a couple years ago that wants to be rotated.

Investigated the sunchoke patch late this afternoon.  These are amazing french fried!  And raw with some nice salt.  And after they're "french fried" (= sliced thin & sauteed in butter in my kitchen) they're really good in a grilled cheese sammich!

Lazy dinner.....not my best effort but whatever.

Pumpkin soup with roasted seeds.

Made my first batch of beef stock from some of the bones of the 1/4 dexter in our freezer. Used some of the broth to make french onion soup (to use up some of our storage onions). Along with a fresh winter greens salad, what deliciousness!

Highly impressed by Judith's miso making skills, I decided to take a leap and post in the cooking forum. I am no where near where she is but here is my go.

Mexican Stuffed Pepper. Heavy on the cheese because I went overboard with the cayenne.

Chicken tortilla pizza with refried beans, green chile sauce, onions, and mozzarella.

No cayenne this time.

Homemade sausage chickpea and kale soup. Along with a homebrew.

Sounds good, Jordan. Mine was pretty plain. Salmon and a mix of vegetables.

Made a low fat clam chowder for lunch.

Spelt dough chicken pot pie.

Was I the only one that had to google "spelt"? That is wicked.

you're making my mouth water with that chicken pot pie you have there. Like your cast iron!

Not dinner but dessert. An apple crumble topped with ice cream.

One of my favourite meals: Spanish-ish fish.
I don't eat fish often, and I'm pretty picky about it when I do.
Swapped a mackerel for some garden advice (as you do).
I love it, and it's unpopular, so it's relatively plentiful . And bonus, no scales!

Mackerel, pan-fried with pre-cooked potatoes, smoked paprika, red onion, beans and garlic.
With a salad of with olives, tomato, parsley lemon juice and great olive oil.

And cider we made last autumn.

Some kind of cured pork in there would really amp up the Spanishness...

Here is quinoa/zucchini/garbanzo burger on rye bread with taco salad. There is "healthy" version of Doritos crushed in the salad.

Omelette with mushrooms, peppers, onions, and nz spinach.

Shrimp Gumbo

I got home late; I love my chest freezer!
Falafel from last season's fava beans, fried up from frozen in the cast iron pan; defrosted pesto 'ice-cube', my friend's awesome fermented chilli sauce and a hard-boiled banty egg.

Tonight we'll be having pinto beans, rice, collards, & corn bread. Using the broth from the ham I cooked in the crockpot for Easter (that was delicious! I'm not ready for it to be gone yet!)

I have become a "lazy vegetarian". Ha! I am finding myself throwing veggies "as is" on the grill for dinner. Asparagus, onions, tomatoes, peppers, etc.

Blueberry pancakes

I had something new (to me) the other night:

Sweet Potato au gratin.
Same recipe as potato au gratin, just substitute with sweet potatoes - Delicious!

John, I've made that before, so good. I have a weakness for sweet potatoes. I've also made it layering a combination of sweet potatoes, red potatoes (skin left on) and yukon gold, colorful and tasty.

Yesterday I made baked beans and spare ribs, cabbage and sauerkraut served with a baked potato. I had uncooked kraut on the side for the micro-organism goodness. Looking forward to the leftovers.

Made something similar. Sweet potato, butternut squash, toasted pignoli nuts, maple syrup, sage, blue cheese au gratin.

Cooked up some turkey and veggies. Quickly!

Home grown turnips and turnip greens and some local sausage.

Edit:

Total cost of this meal, perhaps 2 bucks, with as much turnip and twice as much greens left to go in the fridge.

Badass. I didn't know there was such a thread. A few things here got my mouth a watering. Those sausages directly north of this post have me craving meat major. I'm just finishing up a coconut clam curry soup. Mostly non local ingredients :/ but the variety in diet is nice.

Tiny slice of butter in the bottom of a pot. Prep Shallots into pot. Add 2 Cups chicken broth and 1 cup coconut milk. 6-8 oz diced clams. Bring to simmer and add 1.5 Tbs curry powder. Slowly stir in one duck egg. Add rice noddles. Simmer several minutes and enjoy.

I'm also having a harvest season 'dung out' and discovered a variety of aging preserving efforts...

Tonight I had my old standby 'Mexican-ish': rice with a fried egg, cheese, newly fermented salsa (yum!)
Whole fermented chillies from last year (theykeep forever), coriander, basil and chipotle chillies.
Oh, and tomatillo lime sauce from last year, which to my surprise is actually really tasty.

I've been obsessed with chipotles for decades, and while I like making stuff or buying local,
I got a cheap, enormous tin made in Mexico, with no freaky ingredients, and now my freezer's full of chipotle 'baggies'

Today
Starter -beetroot ( garden ) shallots
Main - white pudding ( free slightly out of date ) apples, potato and pumpkin mash ( garden ) fried egg ( free gift )
Sweet - sheep yoghurt ( free ofd ) with bramble jam ( garden )

'Koreanish': rice topped with the last tiny, raw zucchinis of the season, kimchi, fermented chillies and crispy wakame.
All doused in fish/soy sauce and sesame oil.
