low-carb vine leaf recipe ideas needed

We moved into our new farm earlier this month. I have a garden going, but obviously it's not producing very much yet.

With the lockdown, we're not leaving the property very often and we're running low on fresh greens to eat.  Except that we're over-run with grape vines.  

Does anyone have any suggestions for how to use fresh vine leaves?  I have to eat low-carb, so the usual rice-stuffed dolmades aren't an option for me.  But there simply must be other things to do with them, or low-carb ways to make dolmades.

All suggestions welcome!

Blanch then and chop them finely with fresh herbs.  Mix in just enough egg to coat, and your favorite seasonings. Fry in an oiled pan either as palm-sized "patties" or as one big round to cut into wedges.

You can also substitute chickpea flour for the egg.

I make Dolmades with cauliflower rice for a low carb option. Just as tasty!

When we had our homestead we had a couple of grapevines.

I used the leaves when I made pickles like in this thread.

I also used them to make something like stuffed cabbage though I substituted the cabbage with grape leaves.

I feel vine leaves would be lovely in salads, soups, stews, and other recipes.
