Hi Lissy! Depends on your budget. If you're low on dough go France or south or east east thereof. If you've got a good budget you can look more Northern.
It's all do-able i think in Europe as long as you adapt to nature and are clever with water and natural flows and as a person quite balanced. Basicly if you apply permaculture techniques to your land and are ready to put the work in it's possible to homestead everywhere.
But it's handy to have a look and feel in every country. Maybe WWOOF about Europe before deciding?
I'm in France, good climate, reasonable prices, fairly eco minded people, some great soils, some terrible.
