It looks like I'm going to have peanuts going out of date at the end of this month (my supplier didn't have them, didn't have them, didn't have them and then sent me 6 cases at once !) They are small packs of salted roasted peanuts, like you get as a bar snack. I'm wondering if I can use them as a meal ingredient or for baking perhaps?
l'm looking for inspiration, please share you ideas!

Peanuts make some of the best soup around. There's lots of variations, but I'll share a favourite inspired by Sopa de Mani, a Bolivian dish.

1 cup roasted peanuts (since yours are pre-salted i'd probably give them a rinse)
a few garlic cloves
1 leek (or red onion)
1 red pepper
1 carrot, finely chopped or shredded
1 potato, diced
3 cups of stock (any kind will do)
3 tbsp of preferred cooking fat

Sauté the leek, red pepper and carrot until they start to break down a bit. add the potatoes and peanuts, just stir them in gently to coat in the oil then pour the stock over top, add a bay leaf and simmer for about 40 min. When done, blend the soup with a hand mixer or blender.

I like to season it with black pepper, thyme, chilis and coriander but the soup base is really flexible to whatever seasonings you like. Top with some extra salted peanuts.

A lot of recipes call for celery, I'm not a fan so I leave it out.
If you are a low carb kinda person, swap the potato for a chayote or summer squash.

You are a star Daniel, I would never have thought of soup. My husband's also not a fan of celery. I have some pumpkin left over from Halloween still, so I may try this soup with a bit of pumpkin. Thank you very much!"

West African Peanut Stew is amazing! Rachel Ama's recipe for Peanut Stew is from Sierra Leone: "comforting, crowd-pleasing dish, perfect for a weekend feast" and you can of course adjust the spices to taste.

I love peanuts, always have.

I love peanuts with a block of cheese.

I love peanuts with chocolate and raisins.

Usually, if a recipe has peanuts as an ingredient I look the other way.

Here are some ideas that I found:

My thread on "Gifts from the Kitchen" has a suggestion for Candied Peanuts to give as gifts.

Pie crust made from crushed peanuts.

Make peanut butter.

Another suggestion that does not involve cooking is to use the packages as a loss leader.

Think of what you sell that brings the most money, then offer a free package of peanuts with the purchase of that item.

Or pick something that you sell a lot of and do the same thing.

Thanks for the recipe, Daniel! We made this for dinner, it was really good.  Can’t wait to try it with fresh peanuts next fall.
