I know how everyone uses sweet corn but last year I experimented with some
native American varieties, which are not meant to be consumed in the same way as sweet corn. I grew Glass Gem corn, Hopi blue corn, and another that was bronze or reddish but not sure of the name. My garden spot is new and I haven't had time to improve it so the corn was about the only thing that made but it produced well. I let it dry on the plant, picked, shelled, and stored it with a tiny amount of food grade
DE to keep the moths from eating it and it turned out wonderful. I only had
enough of the gem corn to eat because I saved the rest for my seed corn the next season. I have a grain mill I purchased many years ago to use with wheat so I ran the gem corn through and it made some interesting corn meal. So far I've made polenta and corn bread from it and it turned out wonderful. I can't wait to try the hopi blue this year as I understand it is much more nutritious. So what have you done with your corn and what varieties do you have?
