Any good recipes for Sweet Potato Casserole?

Over the past couple of weeks, I have had several ideas for Christmas Dinner.

For years, we had tamales at our ranch out in West Texas.

We haven't been there in several years though our daughter has a business there so she makes frequent trips.

First I was going to have a pork chop casserole, then I decided to do that in the crock pot.

I remembered I had a ham in the freezer so I took it out to thaw.

I will bake the ham instead of the pork chops.

I have two cans of sweet potatoes in my food storage that I want to use up.

Before I get out the Joy of Cooking Cookbook I thought I would ask here for suggestions.

Any suggestions for a sweet potato casserole?

I have a gluten free version I make with gf pretzel sticks on top, but I'm sure you could use regular pretzel sticks. It is a really good mix of sweet and salty.

I do an altered version of a recipie from better homes and garden cookbook.

Put cooked drained sweet potatoes or yams in a casserole dish. Add about1/4 quantity of cooked, or canned, drained peaches. Spiced peaches are excellent. And expensive. Stir in some nuts. Cashew, pecans, and hazelnut have all been good. Sprinkle some brown sugar on top. Add a dusting of ground ginger. Pop it in the oven at 375 for 30 minutes or until heated through.

I really like this stuff! I think the original recipe called for mini marshmallows topping it off.

EDIT: When putting this together this morning, i realized I failed to mentin dotting butter on top. The above is for one layer. Today, I have three layers, each made as above. With butter also on each layer.

I layer slices of sweet potato with layers of sliced apples. I put a bit of (vegan) butter on one layer, then an herbal mix (like Mrs. Dash or similar) over the next, and keep stacking layers until I run out or my baking dish is full. Then bake at 350F for about 40 minutes.

It's become a fixture on our Christmas dinner table.

If you can use fresh sweet potato the flavor is much superior in my thinking. Make a mash (leaving small lumps) of roasted sweet potato and mix in some mild cinnamon (the Ceylon true cinnamon variety), spoon mixture into casserole dish and drizzle with maple syrup. Sprinkle the top with a mixture of coconut shreds or macaroon coconut, chopped nuts, some ground light flax seed meal (optional), a little palm sugar, a little more cinnamon.  Drop small dabs of coconut oil on top and cover dish with foil and bake for 15 -20 min at 350 deg until heated through, then take off foil for 5 more min to give a golden crust but watch not to burn.

Yes, fresh sweet potatoes are much superior to the canned stuff which is why I want to get the cans out of food storage.

I have not seen a sweet potato at the grocery this year so I must have missed that date.

We had Christmas on Saturday and the sweet potatoes were saved for later.

Dear hubby insisted on potato salad.

Dinner was ham, pineapple, and potato salad.  Simple.
