While sitting in a waiting room, I was thumbing through a magazine and saw a recipe for an ice box cake.
I thought this is a great idea to make something that would not heat up the house since an oven is not involved..

I don’t have a specific recipe, but often make them in summer.
In a glass or clear plastic container, layer:
-graham crackers or tea biscuits or Maria’s
-berries or sliced fruit (raw or stewed, your choice)
-lightly sweetened whipped cream with plain yogurt folded in. About 2 parts whipped cream by volume to 1 part yogurt.
Alternate layers until you fill container or run out of stuff. Top with toasted nuts or coconut.

Anne, My mother made what she called an "ice box cake" with those round nilla waffer cookies, layered with pineapple and maybe whipped cream for (topping)?
It's been many years (50 plus), hard to remember, I know as a kid I loved it!!
Hello Anne, I haven't made any for ages but they are called no bake slices in NZ - usually they are made with any combination of crushed sweet biscuits, melted butter, sweetened condensed milk and have dried fruit, chocolate chips, marsh mallows etc mixed in.
I find them a little too sweet for our personal taste but they are popular for children's lunchboxes.
Some bakeries sell "lolly cakes" that are a no bake slice.

I have tons of vanilla wafers that got stocked up during the pandemic and we got tired of eating them so the icebox cake sounds perfect.
I probably have everything to make one except the whipping cream.
