Does anyone know of a brand of electric pressure cooker (eg instapot) where I can enter the temperature to maintain?
It's nice that these things have options for rice, beans, soup, yogurt, etc -- but I just want the power to say "stay at 42 deg C".
Specifically I'm looking to make fermented bacteria cultures (eg yogurt, cheese), so I need to be able to set it to a low temperature. My understanding is that (as a result of some folks cooking meats on too low of settings and then poisoning themselves), the government made crock pots (slow cookers) have a minimum temperature (iirc 60 deg C), which would kill all bacteria. Well, that's not good if I'm trying to *encourage* bacteria growth.
The beneficial bacteria that I'm looking to culture grow optimally between 35 to 44 degrees (Celsius). So I'd love to be able to try a batch at 35 degrees. And then try another at 36 degrees. And at 37, 38, 39, 40, 41, 42, 43, and 44 degrees too.
Are there any of these fancy electric pressure cookers that let you just enter a number yourself for the temp it should maintain?
