Finally, I've gotten it right.
It's like one of those fortunately/unfortunately stories where you need to be careful what to wish for.
I have been hunting down recipes and wanted to keep them somewhere to find later, someone else may find it useful when they have their own glut....

a hummus-like dip using beans (i'm using black-eyed peas) and cilantro https://www.seriouseats.com/egyptian-bissara-recipe-7109529
a steamed indian bread using chickpea flour https://www.seriouseats.com/beyond-curry-coriander-cilantro-fritters-recipe
rice, soup and a dressing https://zerowastechef.substack.com/p/3-easy-recipes-to-ensure-cilantro
and my favorite smoothie, which I'll have to make tomorrow: a peeled/seeded orange, a frozen banana, and good handful of cilantro. it tastes to me like summer.

One of the many dim sum dumplings I love are the pork and coriander steamed dumplings.

The pot sticker version with home made hot water dough wrappers are less fiddly to make and a large batch can be free flow frozen.

Which reminds me, I need to make another batch, supplies are running low!

I loooooove having dumplings in the freezer for a quick save when I don't feel like cooking....
(and if you also have some good tomatoes.... may I suggest a tomato dumpling chili crisp salad? it's like a delicious triple crown. https://cooking.nytimes.com/recipes/1024075-dumpling-tomato-salad-with-chile-crisp-vinaigrette?unlocked_article_code=1.XU8.UXRT.BbpPvyyw6M8V )
