So much information on making apple cider vinegar. I'll read it later, in autumn, when I'll have apples. I will probably have more than enough to do some experiments.
I know a 'mother' can grow here (or was it a 'scoby'?), because one of my tomato ferments did that. 'Apple cider vinegar with the mother' isn't sold here (in this small Dutch town with only one health food store).

how do you make Apple cider vinegar?
I have seen several ways, but using apple cider and fermenting it did not work for me.
