4 November 2014 Nixtamalized Corn Tortillas. 4 November 2014 Nixtamalized Corn Tortillas.
Tortillas were made from my own Indian corn mixed with commercial flour. Here is the process of making the tortillas from the masa produced as described in the following paragraph.

The corn was ground in a blender and made a perfect base for mixing the dough to make tortillas. Here is the masa making procedure. 3 November 2014 Grinding Nixtamal to Masa 3 November 2014 Grinding Nixtamal to Masa Most pople buy the commercial produced flour to make tortillas, due to ease of making, and the difficulty of grinding the nixtamal with existing hand grinders. This hybrid system solves the problem of grinding wet nixtamalized corn called nixtamal. The method is readily adapted for grinding other wet grains for use in some baking practices.

This is something I'm interested in as well, for the nutritional benefit.

That third video is by Jorge Gaviria at Masienda. They've made a bunch of good videos, so check their channel out more broadly. But more importantly, he just released his book Masa which you can get at Amazon or from Masienda.

And while I have all the respect in the world for Sean Sherman, I prefer this guy's less cheffy approach to wood-ash nixtamalization:

Also, I've been meaning to post something about my recent wood-ash nixtamalization trial, and since this thread just bubbled into currency, it seems like the right place. So here's a series of pictures:

A stack of tortialls. They taste markedly of popcorn. They were good, but made simply amazing chips when fried or baked.
