Sourdough Stinging Nettle Pesto Bread

That's a mouthful of a title, eh? HAHAHA - see what I did there? food puns.. never. get. old



Written by our own permie, R. Ranson!


She gives a recipe for the stinging pesto alone, and the recipe for the whole shebangin' bread roll dealio as well.

She also gives a few tips on harvesting and handling these pokey little sheisters.

Thanks, my nettles are Autumn nettles but freshly regrowing after cutting, so definitely going to do this.

I'm lamenting our dry summer and the lack of nettles now.  I think next year I'll try making this pesto and freezing some so I'll have enough for bread all summer long.

anytime you want to pop over to collect some nettles you are more than welcome . How many hundred weight do you want ?

Looks like the link to the original article no longer works. I couldn't find it via the wayback machine, either. BUT, I did find an old blogpost by R Ranson about making a rye nettle sourdough bread, so maybe it's the same basic recipe!

I've got this rising on my bench/counter. I put mine in a tin as I want square slices this time. It looks good and felt good as I was kneading it so I'm looking forward to the final result when I cook it this evening.
