I just stumbled on a youtube channel about 18th century cooking.  This video is about pies, cooked in a dutch oven an earthern oven.



I'm going to have a rummage through his other videos and see what gems I can find.

Pippins are a type of apple still grown in the UK and france eg Cox - full name Cox's orange pippin
No idea why he calls the birds Corning game hen does it taste better ? I would have thought an older breed better?
