Recently, I've been getting updates for a thread I am watching. When I go there, I find that the last update was months ago. Case in point; Dale's Hugelkultur/Aquaponics Pond from Natural Seep thread; I just got an email of an update; the last update seems to have been three months ago.

Is this sort of thing a case of really speedy spam post removal, or something else?

did you notice the user's name?  that one was definitely spam
I get notices also...many times you can tell from the user name, but usually if the post is gone we can assume it was spam, sometimes for other reasons, but likely spam.  As a by product, it pops some interesting older threads back up to the top.

You're getting email updates on a thread, but when you click, there's no new content?

Most of the time yes.

We have some pretty amazing spam fighting tools but the consequence is that it bumps old threads.  That's often not a bad thing.

Correct.

And I didn't bother to look at the user name; I see that it must have been a spammer.

I've had this happen, but with the last post having been (supposedly) made by a bona fide member.  Would I be correct in assuming that in those cases the post was either deleted, or flagged for 'adjustment' with no adjustments (or acceptable adjustments) having been made?

That would be very likely.  We are bit quick to nip anything like politics or other cider press subjects in the bud before the chaos spreads all over the forum.
