I like the idea of taking a picture when they're all settled, then counting from the picture. Less active attention should be necessary.
The other idea, seeing as how the coop door is only 2x2, is to count them going in, providing you know how many are in there beforehand.
I think what's most critical is to remember not to count them before they hatch.
