Could we eat sprouted beans?

Good morning friends! I wanna find out how we eat beans sprouted for some time now. I had my beans sitting for days all sprouted and don't know what to do. Any of you are them before? If you have, please reach me if you can. Take care!

What sort of beans were they Blake? Usually beansprouts are mung beans, but I'm not sure what family those are.
I think beansprouts can be eaten raw, or I would have them stir fried in a Chinese style dish - finely sliced vegetables and a dash of soy sauce.

They were Ohio pole beans, belonging to the common bean family just as the kidney and pintos. Could we still cook the beans even if they're sprouted for days?

definitely. the only thing to worry about is if they’re starting to spoil : sticky or slimy textures that persist after a good rinse.

I love bean sprouts.

I have been eating them for years.

I especially like to put them in Chow Mein.

There are some threads here on the forum that suggest that bean sprouts need to be cooked.

I have used sprouted beans (cooked first) to make veggie burgers before, they give a better texture than regular cooked beans.  Sprouted beans do not need to cook as long a regular dried beans.
