Someone gave me a free slice of carrot cake yesterday.  I'm devouring the rest of it right now.  It is so freaken good!

In my mind, carrot cake is the world's greatest cake.  It's got the yummy icing that isn't too sweet.  The bestest of all the vegetables to dampen any guilt of eating cake.  Sometimes raisins or chocolate chips.  When it's right, it's heaven!

But a good carrot cake is hard to find.  Either there is too much icing, or not enough. The cake is either too bready or too sweet.  

Maybe it's time to try making my own?  

Anyone got a favourite recipe for carrot cake?

Ahhhh, lady Raven, I totally agree with you.  It's the icing that makes the cake.  It is one of those Cinderella things, it has to be just right, to be a great cake.
I'm sad to say that I can't bake and I'm sure the docs would not like me having cake, but from this day on when or if I do have some carrot cake I'll think of you !

I found a Nigella recipe for carrot cake cupcakes.  It looks delicious.

But it reveals a flaw in my plan.  With carrot cake, there is no won't power.  If I make a full cake, I will probably eat the whole thing in under 4 hours and be sad there is no cake left for tomorrow.

But cupcakes have portion control.

And if I freeze some...can carrot cake freeze well?

I'm not going to contribute a recipe but my technique for enjoying carrot cake is to scrape the icing off. When I do that, it leaves behind a residue which is the perfect amount to compliment the cakey goodness.

Lady Raven, don't they make a mini size cupcake pan?  Bite sized cakes with just a drop of the wonderful icing??  Great portion control!

Christopher, I'm impressed.  What strength!  I could never scrape off the icing.  I guess I have at least two weaknesses - Redheads & Cream Cheese Icing.
