looking for recipes - pumpkin seeds (pepitas)

I'm told pumpkin seeds are super healthy - high in minerals, healthy oils and good for prostate health. My trouble is that most of the ways I would eat them involve baked goods, and I suspect the starch and sugar counteract some of the goodness in the seeds. So please share your favourite ways of using pumpkin seeds. Particularly in savoury meals, but snacks are good too. Thank you!

I used to bake pumpkin seeds and struggle through eating them every Halloween when our kids were young and we carved a jack-o-lantern, but I decided to stop that a decade ago because they're so much work for too little payout. Pepitas on the other hand are wonderful! (Grown in a C pepo pumpkin.)

They're good raw and better toasted, as a snack out of hand. They can go in breakfast cereal mix or baked into bread. You can grind them as a nut butter. I toast them on cast iron and put them in salsa. There are also moles that rely on them. You can also use them as the nut-element in pesto. Sometimes we toast them and top a taco or serving of wilted spinach for a textural flair.

on their own they make a great snack- roast and season with whatever sort of salty business you like (my daughter made a great one with powdered dry tomato, nutritional yeast and garlic salt. fabulous).
We also have made "seed mix" for sprinkling on things- pretty much every kind of seed you would like to see on top of a bagel or roll, with a bit of rolled oats and pan-toasted and mixed with some coarse salt, goes nicely on top of a savory oatmeal, some cooked greens, etc. I am a big fan of sprinkling salty things on other food.....
In reality, the way I get the pumpkin seeds into my husband is a seed powder. I grind up flax, chia and pumpkin in 1:1:1 proportions and he puts two spoons on top of his oatmeal every morning. It gives his breakfast a good protein bump and he also gets the omegas/fiber/etc. while not even really thinking about it. For myself, I might sprinkle it on cut apples or yogurt and fruit.

(edited to clarify, i'm talking about the green pepitas. We have invested so much money in dental work that nobody is cracking seeds with their teeth around here.
Also, I have also used them in pesto and yes, fabulous.)

I make my own trail mix.

I am not a fan of the Green pepitas so my trail mix does not include those.

I use dried papaya, mangoes, banana chips, raisins or craisins, pineapple and cashews. I don't measure as I just dump everything together.

Just mix the pumpkins seed i8n for a great snack.

I have a v nut allergic child so use seeds in salads/pesto/butters etc instead. Pumpkin and sunflower (or omega mix seeds you can get from supermarkets) are delicious dry toasted in a pan, when browned I chuck in some soy and Worcestershire sauces and honey/sugar and cook until dry and crunchy. They would keep for a while in a jar if they weren't devoured by family

I use pumpkin seeds wherever I'd use any kind of nut, including in stir-fries, which can be put in e.g. miso soup too, sprinkled in pasta or rice dishes, salads, even stews.  

Apparently, all edible winter squash seeds are themselves edible?

The steps to processing the squash seeds release the kernels or pepitas, I'm told require (1) carefully cleaning, (2) air drying and then (3) parboiling for c. 15 mins.  Only then will the hulls come away somewhat cleanly from the kernels.

But there are some winter squash bred to have minimal hulls on their seeds.

Pepitas are, I believe, relatively low in the fermentable carbohydrates which cause a lots of IBS symptoms. Certainly, I've happily eaten a lot of pepitas in the last 7 months since being diagnosed with IBS.

Ah, clarifying the language then, I mean pepitas (I've changed the thread title to suit) I can't see my husband munching on seeds with cases on! I actually have a few hull-less pumpkin plants growing, although I'm a bit late starting them, so I don't know if I'll get fruit.

Some good ides here already - I've made a roasted seed mix before. I think I used some worcestershire sauce as a seasoning and that went down pretty well. I'm thinking too that the seeds would go well in my 'risotto'. I think if added near the end they'd not lose much nUtrients.
