My oven temperature settings are bad, I just realised there is another way to know what is going on, what is practical?
I just want a probe that I can see outside of the oven, is a cable system worthwhile?

I can’t help with the temperature probe question, however old and what brand is your oven?

Would it be worthwhile trying to get the thermostat replaced?

Have you checked the seals - if they are loose, your oven could be losing heat.

Spare parts may still available for your oven.

I use a Therm Pro and measure the temperature for all meats.

It works well for my air fryer and I am sure it would work for the oven or even cooktop.

Megan, my oven is 20 years old, I will check the seals  etc thanks.
Anne do you run the cable out the oven door?
I see it has no cable, I think I will try one that does not need the door being openned.

John, Besides the hand held probe that I posted, we have the kind that has a cable from the probe to the temperature gauge.

That kind (with the cable) we run outside the oven door.

The hand held one like in my link is the only one I use now.  I just like it better.

I set a timer for when meat is to be done, or guess when it might be done.  When the timer goes off, I take the meat out of the oven, set it on the cooktop. Then measure the temp.

I have a cheap magnetic temperature probe that sticks on the outside of my oven and has a wired probe that can be put into the oven and into a roast.

Even with the wire wedged into the door, it just works. I have had no issue with it personally.

I got a ThermoMaven wireless meat thermometer a few months back and it has been working great. It gives the meat temp and the ambient temp on a little device that comes with it. There is a mobile app, but I do not use it. My only complaint is when doing a small piece of meat the skewer is kind of thick. But for roasts and the like it works great.

$10 digital thermopro still works perfect after about 5 or 6 years.
