Any suggestions for a free PDF editor?

Or if it must be paid, one that is easy for a n00b to use to make professional quality edits.

Specifically editing existing PDF files, or just creating new ones? For the latter, CutePDF works well, it installs a virtual printer that you "print" to from any application that supports printing, and the CutePDF printer will generate a PDF copy of the file which you then save where you like.

I've heard LibreOffice has a PDF editor but I haven't personally used it so can't say if it's simple and/or bug free.

I would definitely be interested in anything that allows you to edit existing .pdfs.  The new version of Quark does... but that version came out just a few months after I updated... way too expensive.  I publish regional magazines, so being able to tweak ads sent to me in .pdf would be great.  There is a free service to convert color profiles for print: http://www.pdf2cmyk.com/

Mostly editing.  Most of the time, I just need to remove some text.

I believe that some older versions of GIMP could edit .pdfs.

Having written my fair share of programs for the PDF format, I'd try to edit the source file instead.

(I have used Inkscape and PDFedit, and prefer the former.)
Editing PDF files is a tricky thing and the editor may keep (parts) of the data you think got deleted, so files often contain more data than is visible, which is a risk if you want to remove information.

I use libre office for doc files and such and they have a feature that allows exporting a file as pdf.

I opened the pdf with adobe reader, select all, copy, then paste into the libre office writer.  then made a change and exported as pdf.

For some reason I could only open pdfs in libre office under the draw program which does not allow text editing, but pasting into the writer  seemed to keep the format in tact.
