This was my first time slaughtering a sheep myself - usually I have a mobile butcher do it.

This is a 6 month old lamb



I am using a knife to harvest  


I cut one strong cut.


field dressing.  I am keeping the meat clean by keeping it on the hide


legs removed



cutting open rib cage


making a cut in the spine to make a roast size piece


here are the portion sized parts  legs, ribs,chops and sternum


we will eat the liver and heart.  I will add the windpipe to a bone broth


here is the offal pile with the gallbladder on top


here are the organs on the hide


meat in the cooler done in 45 min!

Guys!! I was able to butcher a sheep today!! 😃 my friend, Landon had 6 to butcher and I helped him do "mine" (his sheep that I slaughtered and cleaned that counts for the bb) plus more.

Landon butchered one at the same time and showed me what to do as we went along. We used my Taurus 9mm to dispatch them while they fed. Two bullets to the head. In a second it was done.

Then we hung them by their back tendons on this handy little stand. I skinned my sheep and then removed the internal organs.

The sheep will be hung for aging before final butchering.

Organs separated out. Liver, heart, kidneys and stomach wrapper on the bottom, intestines and stomachs on the top. I know they are edible with additional processing. But I do not care to clean them.
