This was my first time slaughtering a sheep myself - usually I have a mobile butcher do it.

This is a 6 month old lamb



I am using a knife to harvest  


I cut one strong cut.


field dressing.  I am keeping the meat clean by keeping it on the hide


legs removed



cutting open rib cage


making a cut in the spine to make a roast size piece


here are the portion sized parts  legs, ribs,chops and sternum


we will eat the liver and heart.  I will add the windpipe to a bone broth


here is the offal pile with the gallbladder on top


here are the organs on the hide


meat in the cooler done in 45 min!
