In a different life, we frequented a Steak House which had a great salad bar.

My favorite from that salad bar was Cornbread Salad.

Since I have not had it in years I don't remember what the ingredients were.

Does anyone have a favorite Cornbread Salad recipe to share?

Cornbread salad is a scrumptious southern dish that’s made with cubed cornbread, pinto beans, crispy bacon, sweet corn kernels, diced tomatoes, and sliced scallions. What’s more, the dish is topped off with a generous amount of shredded cheese!

Thank you Nancy for posting a recipe.

We moved from that area in 2007, and my recollection of the salad was possibly corn, tomatoes, and scallion.  If there was anything else I can't remember.

From recipes that I have looked at, there were no pinto beans, black-eyed peas, bacon, or cheddar cheese.

And the biggy is that there was no dressing, no mayonnaise,  sour cream, or ranch dressing mix.

I think what I will have to do is just make it the best I can with what I remember.

That looks close to my grandmother's cornbread salad recipe except she used fresh corn & beans. Sometimes black eyed peas instead of pintos. Sometimes with jalapeno.

Oooh! I had never heard of cornbread salad, think I need to bake some cornbread! That looks good! Well, except for the recipes that start with a package of cornbread mix...

This probably isn’t the salad that Anne remembers, but it is my all-time summer favorite with cornbread on the side.
To a serving bowl of chopped tomatoes, rinsed black beans, fresh corn, chopped scallions, and chopped garden peppers, mix in this dressing:

Lime zest and juice of a fresh lime (more if using Key limes)
1/4c chopped cilantro (leaves and smallest stems)
1/2 fresh jalapeno pepper, seeded and chopped fine
1 t toasted cumin seed, crushed fine
1 or 2 cloves garlic, smashed and minced
1/4 to 1/2 c olive oil (extra oil for mopping up juices with cornbread)

I will see if I can find my recipe for it. I love the stuff so much, I made some for our wedding reception, 13yrs ago. I'll see if I can find it, and come back tomorrow!


(I will say, mine doesn't have beans, though, and I'm pretty sure mine is made with shoepeg sweetcorn)

I'm sorry. I couldn't find my recipe box, then in the middle of making jam, the stupid glass top on the stove cracked, so this didn't go well. I'll look for it again, tomorrow, while hubby figures out what to do about the stove.

Thanks, Anne. We're working on solutions, today. I've always hated glass top stoves, but not so much that I had that kind of vendetta against them.

So, here's my cornbread salad recipe:

1 recipe Northern style (sweet) cornbread, cubed
1C diced bell pepper
1/2C diced red onion
2/3C scallions, cut to about 1/8"
1C cucumber, peeled & diced (optional)
1pint grape tomatoes, halved
12 - 16oz pkg frozen shoepeg sweetcorn
1 - 1.5lb bacon, cut to 1"pieces & cooked crisp
1C mayo
1C buttermilk dressing(I make my own)
Black pepper, to taste (I use about 2 - 3T)

Combine gently, but well. Chill overnight (I typically have to threaten the family's lives to keep them out of it).

No beans in mine here in SW Oklahoma.  Cornbread (day old left overs are fine), tomatoes, green onion, red or green pepper and mayo thinned with a little milk.  Mix it up and let it rest a bit. (tried to delete this one and go with the next post but
couldn't figure out how. lol)
