This one is hard for me... but probably canning. It takes more work, but it can survive losing electricity for a few days.

Assuming I have the similar amenities that I currently have...

I have to go with freezer. It is just so convenient!

Freezing wins for ease, nutrition, and taste. BUT… freezers are expensive and finicky and rely on reliable power.

So if I had to pick one, it would be canning but include lacto fermented

I also prefer the freezer, for flavor, esthetics, and nutrition - but electricity, doors accidentally not completely closed, and freezer burn push me toward canning.
