I would go with the tall raised beds... it might help keep animals away, even though I would need a ladder.

Gates. I have trashed knees and can't climb up easily.

How would you even FILL 6 foot deep beds? If I DID have them I'd be growing deep rooted trees and bushes in them, with root crops as fillers.

Gardens in my mind never need water

Interesting conundrum! I think (if someone else is filling them with only good stuff) I'd go for the 6ft raised beds - end to end. Then, I'd put scaffolds by them, and a manual dumbwaiter at each end. I go up with whatever I need in the dumbwaiter, and take care of them all, while letting my shade-loving gardens in the shade created by the beds & scaffolds.

Deer can jump 6 ft if motivated (and my veggies are a *very* strong motivator from past experience) and you didn't say how high the fences and gates were, so I'm calling this one too hard on my tired brain to even picture.

But if you want to donate to me 7 ft tall, deer-proof fencing and all the gates I want, "Yes please, sign me up!"

Are they six foot hugel beds?

I could also imagine transplanting into holes drilled into the side of wooden raised beds.

The original idea was to pick between two annoying options, so I was imagining normal rectangular raised beds... just 6 foot high. But you all just came up with some great ideas to make the problem the solution :) Permaculture for the win.
